Grilled Lemon Chicken with Fresh Basil Sauce, a recipe

Original recipe by Giada De Laurentiis
Ingredients:
4 Split Chicken Breasts, bone in, skin on
2 Lemons (you will use juice and zest)
Extra Virgin Olive Oil
2 TBSP dijon mustard
Salt and Pepper to taste
1 cup Fresh Basil Leaves
2 Garlic Cloves
First, make a quick marinade for your chicken:
Juice of 1 lemon
1/4- 1/3 cup Ex. Virg. Olive Oil
2 TBSP dijon mustard
Salt and Pepper to taste
Using a fork, pierce the chicken several times to allow the marinade to saturate the meat. Next, place it into a zip top bag, whisk marinade ingredients together in a small bowl then pour over the chicken. Press the extra air out of the bag and refrigerate for a minimum of a 1/2 an hour.
Preheat your grill to medium high heat, grill skin side down for 8-9 minutes. Flip to second side, reduce heat to medium low and grill another 8 minutes.
While chicken is grilling, make your basil sauce:
In a blender (or if you're me and forgot that your blender DIED, in your mini chopper and then finish off with your immersion blender because the mini chopper doesn't quite do the trick) combine basil leaves, juice of 1 lemon, 1 tsp lemon zest, garlic cloves, salt and pepper.
Turn the blender on and slowly stream 1/3 cup of Ex. Vir. Olive Oil into the mix until smooth.
Pour over chicken and serve!
